Glycaemic index

The glycaemic index is an expression of the amount by which the blood sugar increases when you have eaten a particular amount of a foodstuff.
Glucose or white bread is often used as reference, with an index value of 100.
An apple, for example, has a glycaemic index (GI) of 38. That means that an apple produces a blood sugar response equal to 38% of the increase the same amount of glucose would produce.
The gist of the glycaemic index theory is that you should primarily choose products with a low GI. A number of studies indicate that the blood sugar increase is more stable when a substantial proportion of the carbohydrates has a low GI.
